Hidden sources of Sesame
Seeds, tahini and oils; an increasingly recognised allergen.
Where it hides
- Hamburger and sandwich buns — sesame seeds are dusted on top or milled into the dough/flour
- Spice blends like za'atar, dukkah, and everything bagel seasoning — sesame is a core ingredient in these mixes even when not the headline flavor
- Falafel and tahini sauce — tahini sauce is a near-universal accompaniment to falafel, and sesame is sometimes worked into the falafel mixture itself as well
- Granola and protein bars — sesame seeds are used for crunch and can be buried in a long ingredient list
- Finishing/marinade oil in Asian dishes — toasted sesame oil is added at the end of cooking and easy to overlook on a menu
- Bakery cross-contact — sesame seeds used on other breads can transfer to shared surfaces, slicers, and ovens
